Roasted Salmon Traybake (HC)

Ingredients

  • 160g potatoes cut into bite-sized pieces
  • 1 tsp olive oil
  • Black pepper to taste
  • 2 carrots,sliced
  • 80g courgette,sliced
  • 1 small onion,sliced
  • ½ tsp garlic powder
  • 1 tsp dried mixed herbs
  • 1 small salmon fillet (approx 110g)
  • 1 tsp lemon juice

Instructions:

  1. Preheat the oven to 200°C / 180°C fan / Gas Mark 6.

  2. Toss the potatoes with half of the olive oil and season with the black pepper. If your carrots are cut into thick slices, add them to the tray now. Roast for 15 minutes.

  3. Meanwhile, toss the courgette, onion and remaining carrots with the remaining olive oil, garlic powder and dried mixed herbs. Season the salmon with black pepper and drizzle with the lemon juice.

  4. Remove the tray from the oven. Push the potatoes (and carrots, if already added) to one side, then add the remaining vegetables and the salmon.

  5. Return to the oven and bake for 18–20 minutes, or until the salmon is cooked through and the vegetables are tender.

  6. Serve immediately.
