Raspberry Chia Pudding

Raspberry Chia Pudding

Ingredients

  • 125g full-fat Greek yoghurt
  • 1 heaped tbsp chia seeds
  • ¼ tsp vanilla extract (optional)
  • 1 tsp honey (or maple syrup)
  • 100g frozen raspberries
  • Splash of water
  • 2 tsp flaked almonds

Instructions

  1. Add the Greek yoghurt, chia seeds, vanilla extract (if using) and half of the honey to a jar or container and mix around until incorporated.

  2. Place the raspberries, water and the remaining honey into a bowl and mash to form a puree.

  3. Add the raspberry puree on top of the chia pudding. You can mix in or leave as a layer.

  4. Close the jar/container and place it in the fridge overnight.

  5. In the morning, serve topped with the almonds.
