Raspberry Chia Pudding
Ingredients
- 125g full-fat Greek yoghurt
- 1 heaped tbsp chia seeds
- ¼ tsp vanilla extract (optional)
- 1 tsp honey (or maple syrup)
- 100g frozen raspberries
- Splash of water
- 2 tsp flaked almonds
Instructions
Add the Greek yoghurt, chia seeds, vanilla extract (if using) and half of the honey to a jar or container and mix around until incorporated.
Place the raspberries, water and the remaining honey into a bowl and mash to form a puree.
Add the raspberry puree on top of the chia pudding. You can mix in or leave as a layer.
Close the jar/container and place it in the fridge overnight.
In the morning, serve topped with the almonds.
