Peppered Steak and Garlic Potatoes (HC)
Ingredients
- 160g potatoes, cubed
- ½ tsp unsalted butter
- 1 tsp garlic powder
- Black pepper, to taste
- 1 small sirloin steak (approx. 120g)
- 1 tsp olive oil
- 140g broccoli
- 70g green beans
- 1 tsp fresh parsley, chopped
Instructions
Preheat the oven to 200°C.
Place the potatoes in a saucepan of boiling water and cook for 8–10 minutes until slightly softened. Drain well.
Transfer the potatoes to a baking tray and toss with the butter, garlic powder and black pepper.
Bake for 20–25 minutes, turning halfway through, until golden and crisp.
Meanwhile, season the steak with black pepper and a drizzle of olive oil.
Heat a frying pan or griddle pan over a high heat and cook the steak for 2–4 minutes on each side, depending on thickness and your preferred level of doneness.
Transfer the steak to a plate and allow it to rest for 3–5 minutes.
While the steak is resting, steam or boil the broccoli and green beans for 4–5 minutes until tender.
Sprinkle the fresh parsley over the potatoes and serve alongside the steak, broccoli and green beans.
Note - Allowing the steak to rest before serving helps keep it tender and juicy.
