Peanut Butter + Chocolate Chia Pudding

Ingredients

  • 125g full-fat Greek yoghurt
  • 1 heaped tbsp chia seeds
  • ¼ tsp vanilla extract (optional)
  • 1 tsp honey (or maple syrup)
  • 1 heaped tsp smooth peanut butter
  • 1 tsp dark chocolate chips
  • 5g peanuts, chopped
  • Portion of fruit of your choice (e.g., a handful of berries, 1 banana etc.)

Instructions

  1. Add the Greek yoghurt, chia seeds, vanilla extract (if using), honey, peanut butter and chocolate chips to a jar or container and mix around until incorporated.

  2. Close the jar/container and place it in the fridge overnight.

  3. In the morning, finish the chia-pudding with a sprinkle of chopped peanuts.

  4. Serve with a portion of fruit of your choice.

Note - Add a little milk before serving to loosen the consistency if you prefer.

Store any leftovers in an airtight container in the fridge for up to 3 days.
