Masala Scrambled Eggs

Ingredients

  • 1 tsp olive oil

  • 1 spring onion, chopped

  • ¼ tsp turmeric

  • ¼ tsp garam masala

  • 6 cherry tomatoes, chopped

  • 2 eggs

  • 10ml milk (of your choice)

  • Pinch of black pepper, to taste

  • 1 tbsp fresh coriander, chopped (optional)

Instructions

  1. Heat the oil in a non-stick pan over medium heat.

  2. Add the chopped spring onion and sauté until lightly browned.

  3. Stir in the turmeric and garam masala, cooking for 2–3 minutes until fragrant.

  4. Add the quartered cherry tomatoes and cook until soft.

  5. Meanwhile, beat the eggs with the milk in a bowl. Season with black pepper.

  6. Lower the heat, then pour the egg mixture into the pan.

  7. Gently scramble with a spatula until the eggs are just set and fluffy. Cook a little longer if you prefer firmer scrambled eggs.

  8. Garnish with fresh coriander if using, and serve immediately.
