Mackerel Plate (LC)
Ingredients
4 cherry tomatoes, halved
¼ cucumber, sliced into sticks
½ carrot, sliced into sticks
½ red pepper, sliced
1 or 2 pickled beetroot / 1 tbsp sauerkraut
A handful of mixed salad leaves
1 peppered smoked mackerel fillet (skin removed)
A squeeze of fresh lemon juice
1 tsp extra virgin olive oil
Instructions
Arrange the cherry tomatoes, cucumber sticks, carrot sticks, red pepper, beetroot/sauerkraut and mixed salad leaves on a plate.
Place the mackerel fillet on top of or alongside the salad. You can serve the mackerel warm or cold.
Drizzle with lemon juice and extra virgin olive oil.
Serve and enjoy
Note - Feel free to mix and match with any raw or roasted vegetables or salad ingredients you have to hand - this plate is easily adaptable to suit your tastes or what’s in your fridge.
