Halloumi, Hummus + Pitta Bread (HC)
Ingredients
- 1⁄2 small red onion, diced
- 2 large tomatoes, sliced into chunks
- 1⁄2 red pepper, diced
- ½ cucumber, sliced into chunks
- 70g halloumi, sliced
- 1 tsp extra virgin olive oil
- Squeeze of lemon juice
- Pinch black pepper, for seasoning
- 1⁄2 tsp oregano
- 1 tbsp fresh parsley, chopped (optional)
- 1 small pitta bread
- 1 tbsp hummus
Instructions
Add the vegetables and halloumi to a bowl.
Add the olive oil, lemon juice, black pepper, oregano and fresh parsley. Mix well to coat everything in the dressing.
Heat a frying pan over medium heat and fry the marinated halloumi slices until golden, turning halfway through. Set aside.
Toast the pitta bread in a toaster or air fryer until warm.
Cut the pitta bread along the side to create a pocket.
Spread the hummus inside the pitta pocket, then fill it with the dressed salad and halloumi.
