Halloumi, Hummus + Pitta Bread (HC)

Ingredients

  • 1⁄2 small red onion, diced

  • 2 large tomatoes, sliced into chunks

  • 1⁄2 red pepper, diced

  • ½ cucumber, sliced into chunks

  • 70g halloumi, sliced

  • 1 tsp extra virgin olive oil

  • Squeeze of lemon juice

  • Pinch black pepper, for seasoning

  • 1⁄2 tsp oregano

  • 1 tbsp fresh parsley, chopped (optional)

  • 1 small pitta bread

  • 1 tbsp hummus

Instructions

  1. Add the vegetables and halloumi to a bowl.

  2. Add the olive oil, lemon juice, black pepper, oregano and fresh parsley. Mix well to coat everything in the dressing.

  3. Heat a frying pan over medium heat and fry the marinated halloumi slices until golden, turning halfway through. Set aside.

  4. Toast the pitta bread in a toaster or air fryer until warm.

  5. Cut the pitta bread along the side to create a pocket.

  6. Spread the hummus inside the pitta pocket, then fill it with the dressed salad and halloumi.
