Gochujang Salmon Stir Fry (HC)
Ingredients
- 60g noodles
- 1 tsp olive oil
- 1 salmon fillet (approx. 110g)
- Approx. 200g stir-fry vegetables
- 1 tsp sesame seeds
- Lime wedge, to serve (optional)
Gochujang Sauce:
- 1 heaped tsp gochujang paste
- 1 tbsp low sodium soy sauce
- 1 heaped tsp oyster sauce
- 1 heaped tsp honey
- 1 tsp lime juice
- ½ tsp garlic powder
- ½ tsp ground ginger
- 2 tbsp water
Instructions:
Cook the noodles according to the packet instructions. Drain and set aside, reserving a small splash of the noodle water.
Meanwhile, add the gochujang paste, soy sauce, oyster sauce, honey, lime juice, garlic powder, ground ginger and water to a small bowl. Mix until combined.
Heat the olive oil in a large non-stick frying pan over a medium heat. Add the salmon fillet and cook for around 3–4 minutes on each side, depending on thickness, until almost cooked through.
Spoon around 1 tsp of the gochujang sauce over the salmon and cook for a further 30–60 seconds, turning to coat. Remove the salmon from the pan and set aside.
Add the stir-fry vegetables to the same pan and cook for around 4–5 minutes, stirring regularly, until tender but still with a little bite. Add a small splash of water if needed to help them cook.
Reduce the heat and add the cooked noodles and remaining gochujang sauce. Toss everything together for 1–2 minutes, until the noodles and vegetables are evenly coated and the sauce is hot. Add a splash of the reserved noodle water if needed to loosen.
Taste test and add more flavour or seasoning if needed.
Flake the salmon into large pieces and gently toss through the noodles, or serve the salmon on top.
Sprinkle with sesame seeds and, if desired, finish with a squeeze of fresh lime, then serve.
Note: Feel free to use your favourite stir-fry vegetables, peppers, broccoli, mangetout, mushrooms, baby corn and pak choi all work well. Store leftovers covered in the fridge for up to 2 days and reheat until piping hot, adding a splash of water if needed to loosen the sauce.
Can’t find Gochujang? Simply increase the oyster sauce, or add Teriyaki sauce or sweet chilli sauce for a simple stir fry.
