Falafel + Fattoush Wrap (HC)

Ingredients

  • 1 tomato, chopped

  • ½ small head of romaine lettuce, chopped

  • ¼ cucumber, chopped

  • ¼ green pepper, chopped

  • 2 radishes, sliced

  • 1 spring onion, chopped

  • 1 tsp fresh parsley, chopped

  • 1 tsp fresh mint, chopped

  • 3 falafels

  • 1 large wholemeal wrap

  • 1 tbsp hummus

Dressing:

  • 1 tbsp extra virgin olive oil

  • 1 tsp lemon juice

  • 1 garlic clove, grated

  • ½ tsp smoked paprika

  • ½ tsp honey

  • 1 tsp balsamic vinegar

  • Black pepper, to taste

Instructions

  1. Mix all the dressing ingredients in a small bowl or jar. Set aside in the fridge to allow flavours to develop.

  2. In a large bowl, combine the tomato, romaine, cucumber, green pepper, radishes, spring onion, parsley, and mint.

  3. Pour the dressing over the salad and toss well to coat.

  4. Warm the falafels according to the packet instructions.

  5. Warm the wholemeal wrap in a dry pan for 30 seconds per side or microwave for 10–15 seconds.

  6. Lay the wrap flat, spread over the hummus and pile the dressed fattoush salad into the centre. Top with the warm falafels.

  7. Roll up the wrap tightly, folding in the sides as you go. Slice in half and serve immediately.
