Date and Walnut Granola
Ingredients
- 80g oats
- 50g walnuts, roughly chopped
- 1 tbsp chia seeds
- 1 tbsp mixed seeds (pumpkin, sunflower etc.)
- ½ tsp ground cinnamon
- 20ml olive oil
- 30ml honey
- 40g dates, chopped
To serve (per portion):
- 125g full-fat Greek yoghurt
- Fruit of choice
Instructions:
Preheat the oven to 160°C (140°C fan) and line a baking tray with baking paper.
Add the oats, walnuts, chia seeds, mixed seeds and cinnamon to a large mixing bowl.
Pour over the olive oil and honey, then stir well until everything is evenly coated.
Spread the mixture evenly over the prepared baking tray and gently press it down with the back of a spoon to help create crunchy clusters.
Bake for 20–25 minutes, stirring once halfway through.
During the final 5 minutes of cooking, stir through the chopped dates and return to the oven.
Remove from the oven and allow the granola to cool completely on the tray. It will become crisp as it cools.
Transfer to an airtight container and store for up to 2 weeks.
Serve with 125g full-fat Greek yoghurt and your favourite fruit.
Note - Double the batch and store it in an airtight container for up to 2 weeks, so you've always got a homemade granola ready to enjoy with Greek yoghurt and fresh fruit for breakfast or a snack.
