Comforting Steak Sandwich (HC)
Ingredients
- 1 small beef sirloin steak (approx. 120g)
- Pinch of salt
- Black pepper, to taste
- 1 tsp olive oil
- ½ onion, sliced (sautéed, raw or pickled)
- 1 heaped tsp mayonnaise
- 1 tbsp full-fat Greek yoghurt
- 1 tsp dijon mustard (or any mustard)
- 1 ciabatta or crusty bread roll
- A handful of rocket
- ½ small avocado (or ¼ large), sliced
- 30g cheese, grated
- ½ roasted red pepper (or regular red pepper), sliced
Instructions
Season the steak with salt and black pepper and drizzle with olive oil. Heat a pan over medium-high heat and cook the steak to your liking. Remove from the pan and set aside to rest.
If sauteing the onions, add to the same pan and cook until golden.
Mix the mayonnaise, yoghurt and mustard in a small bowl.
Slice the ciabatta or crusty roll in half. If you like, lightly toast. Spread the mustard sauce over the roll.
Slice the steak then layer onto the bottom slice of the bread.
Top with the rocket, avocado, onions, cheese and red pepper.
Close the sandwich, press gently, and enjoy.
Note - Feel free to use any vegetables you like, and swap the sauce for one you prefer, such as chilli mayo or 1 tbsp coleslaw.
