Chilli Beef Nachos (HC)
Ingredients
- 1 tsp olive oil
- ½ red onion, peeled and finely chopped
- ½ clove garlic, peeled and crushed
- 120g 5% fat beef mince
- 1½ tsp tomato puree
- ½ tsp ground cumin
- ½ tsp ground cinnamon
- 100g tinned chopped tomatoes
- 1 corn tortilla
- 30g cheddar cheese, grated
- ½ red chilli, sliced
- 1 tbsp soured cream
- 10g fresh coriander, finely chopped
- Portion of salad or vegetables of your choice
Instructions:
Preheat the oven to 200 °C / 180 °C Fan (400 °F) Gas 6.
Heat the oil in a frying pan and add the onion and garlic and fry for a couple of minutes.
Add the mince and fry until browned.
Add the tomato puree and spices and fry for a minute then pour in the chopped tomatoes and a splash of water.
Bring to a simmer then cook gently for 15-20 minutes.
Meanwhile cut the tortilla into triangles, arrange on a baking tray in a single layer then bake for 10 minutes or until crisp.
In a serving bowl, layer the tortilla crisps with the beef chilli then top with the cheese, chilli, soured cream and coriander.
Serve with salad or vegetables.
