Chicken Gyros Bowl

Ingredients

  • 1 chicken fillet (approx. 120–150 g), diced
  • 1 tsp olive oil
  • ¼ tsp smoked paprika
  • ¼ tsp dried oregano
  • ¼ tsp garlic powder
  • ¼ tsp cumin
  • ¼ tsp ground coriander
  • Black pepper for seasoning
  • A handful of mixed salad leaves
  • ¼ cucumber, diced
  • ¼ red onion, sliced
  • 5-6 cherry tomatoes, quartered
  • 30 feta cheese, crumbled
  • 5 pitted black olives (optional)
  • 1 tbsp tzatziki (or 1 tsp mayonnaise)

Instructions

  1. Preheat the oven or air fryer to 180°C (fan).

  2. Add the diced chicken to a bowl with the olive oil, smoked paprika, oregano, garlic powder, cumin, ground coriander and black pepper. Toss well to coat evenly.

  3. Cook the chicken in the oven or air fryer for 12-15 minutes, turning once if needed, until cooked through and lightly golden.

  4. While the chicken cooks, add the mixed salad leaves to a bowl and top with the diced cucumber, red onion, cherry tomatoes, feta and olives (if using).

  5. Once cooked, add the warm chicken to the bowl and finish with a dollop of tzatziki (or mayonnaise).

Note: In a rush? You can use around 100g of cooked chicken instead of cooking from raw. Simply warm it gently with the spices before adding to the bowl.
