Chicken, Couscous + Veggies

Ingredients

  • 1 chicken fillet, approx. 125g
  • ½ tsp olive oil
  • Black pepper, to taste
  • 60g couscous
  • ½ vegetable stock cube (low sodium)
  • Portion of veggies (your choice: frozen veg medley, frozen peas/sweetcorn, etc.)
  • 1 tsp mayo or 1 tbsp tzatziki

Instructions

  1. Brush the chicken fillet with olive oil and season with black pepper. Cook the chicken by grilling, pan-frying, or baking for 15–20 minutes, or until fully cooked.

  2. Meanwhile, cook the couscous according to the packet instructions. Dissolve the stock cube in the hot water you’ll be using for the couscous, then pour the stock over the couscous and leave it to steam.

  3. Prepare your vegetables while the chicken and couscous are cooking - steam, stir-fry, or heat frozen vegetables as preferred.

  4. When everything is cooked, plate up the chicken, couscous and vegetables.

  5. Serve with your choice of condiment on the side.
