Chicken Caesar Pasta

Ingredients

  • 60g wholemeal pasta
  • 100g cooked/roasted chicken, diced or shredded
  • 2 bacon slices, grilled
  • 6 cherry tomatoes, halved
  • ½ red onion, finely sliced
  • A large handful of rocket
  • Black pepper, to taste
  • 1 tsp Italian herbs
  • 1 heaped tbsp of real Caesar dressing
  • 1 heaped tbsp Greek yoghurt
  • 30g parmesan

Instructions

  1. Cook the pasta according to the packet instructions. Once cooked, drain, rinse under cold water to cool and set aside.

  2. Prepare the salad base. In a large bowl, add the cooked pasta, chicken, crispy bacon, cherry tomatoes, red onion and rocket. Season with black pepper and Italian herbs.

  3. Add the Caesar dressing and Greek yoghurt to the bowl and toss everything together until everything is evenly coated.

  4. Taste and add additional seasoning if needed.

  5. Transfer to a bowl, sprinkle with parmesan and serve immediately.
