Cherry + Pistachio Overnight Oats

Ingredients

  • 150g frozen cherries
  • 2 tsp honey
  • ½ tsp vanilla essence
  • 120g porridge oats
  • 350ml milk (of your choice)
  • 3 tbsp Greek yoghurt
  • 3 tsp chia seeds

Serving (per portion):

  • 30g pistachio nuts,crushed

Instructions

  1. Add the frozen cherries to a small saucepan along with 1 tsp honey and the vanilla essence. Simmer over a low-medium heat for 5–8 minutes until the cherries soften and form a compote. Set aside and allow to cool.

  2. Add the oats, milk, Greek yoghurt, chia seeds and remaining 1 tsp honey to a large bowl or container and stir well.

  3. Once the cherry compote has cooled, you can either stir it through the oat mixture, or keep it in a separate container to spoon over fresh before serving.

  4. Cover the oat mixture (and the compote, if storing separately) and place in the fridge overnight, or for at least 4 hours.

  5. Before serving, top with the crushed pistachios.

Note - This recipe serves 3 and can be stored in the fridge for up to 3 days. For the best crunch, add the pistachios just before serving, either crush them fresh each time, or crush the full amount in advance and store in a small airtight container.

If using dairy-free milk, feel free to add extra yoghurt for additional protein.
