Bounty Chia Pudding

Ingredients

  • 125g full-fat Greek yoghurt
  • 1 heaped tbsp chia seeds
  • ¼ tsp vanilla extract (optional)
  • 1 tsp honey (or maple syrup)
  • 1 heaped tbsp desiccated coconut
  • 1 tsp dark chocolate chips
  • Portion of fruit of your choice (e.g., a handful of berries, 1 banana etc.)

Instructions

  1. Add the Greek yoghurt, chia seeds, vanilla extract (if using), honey and desiccated coconut (reserve a little for topping) to a jar or container and mix around until incorporated.

  2. Close the jar/container and place it in the fridge overnight.

  3. In the morning, place the chocolate in a microwaveable bowl and heat for a few seconds until melted.

  4. Drizzle the chia pudding with the melted dark chocolate and finish with a sprinkle of desiccated coconut. Eat straight away or set back in the fridge for the chocolate to set.

  5. Serve with a portion of fruit of your choice.
