Beef Stir Fry (HC)
Ingredients
- 60g brown rice
- 2 tsp sesame oil
- 100g lean beef strips
- ½ onion, sliced
- ½ red pepper, seeds removed and thinly sliced
- 30g baby corn
- 65g broccoli, sliced
- 1 garlic clove, crushed
- 1.5 tbsp oyster sauce
- 1.5 tbsp reduced salt tamari or soy sauce
- 1 tsp sesame seeds
Instructions:
- Cook the rice as per the packet instructions and set a side. 
- Meanwhile, heat a large wok or frying pan over a high heat and add 1 tsp of the oil. 
- Add the beef strips and stir fry for 1-2 minutes or until browned and just cooked. 
- Transfer to a plate. 
- Put the remaining oil in the pan and add the onion, pepper, baby corn, broccoli and garlic and stir fry for 2 minutes. Add 2 tsp of water if needed. 
- Add the oyster sauce and tamari or soy sauce and toss until well combined. 
- Add the sesame seeds and the cooked beef strips and stir fry everything for 1 minute until heated through.
