Beef and Mushroom Stroganoff (HC)
Ingredients
- 1 tsp olive oil
- 1⁄2 clove garlic, crushed
- 120g sirloin steak pieces, lean
- 1⁄2 onion, diced
- 1⁄2 green pepper, diced
- 6 mushrooms, sliced
- 4 tbsp green beans
- 1⁄2 tsp paprika
- Black pepper
- 1 tbsp Worcestershire sauce (optional)
- 1⁄2 stock cube, low sodium
- 50ml water (or as needed for desired consistency)
- 1 tbsp creme fraiche, full fat
- 65g brown, wholegrain rice
- Flour (optional)
Instructions:
Add some olive oil, garlic, beef steak pieces, onions and pepper (bell pepper) to a frying pan/pot.
Cover and allow to sweat on a low heat for 4-6 minutes until the onions and pepper (bell pepper) start to soften.
Add the mushrooms, green beans and paprika powder
Season with black pepper, optional Worcestershire sauce.
Then add the stock cube and some water then allow to simmer for a further 15 minutes.
Add some crème fraiche and mix. If the sauce isn’t thick enough, add a little flour.
Taste test and season more if needed.
Serve with rice
