Beans + Eggs Skillet

Ingredients

  • 2 sausages (pork, beef, chicken/turkey or veggie), chopped
  • 1 tsp olive oil
  • 75g mushrooms, sliced
  • Black pepper for seasoning
  • 1 tsp paprika
  • 1 tsp oregano
  • ½ tin of chopped tomatoes
  • 1 small tin baked beans (reduced sugar)
  • A handful of spinach
  • 2 eggs

Instructions

  1. Cook the sausages in the oven or air fryer (adjust timing as necessary) until browned and cooked through.

  2. Once cooked, chop into bite-sized pieces and set aside to keep warm.

  3. Heat the olive oil over a medium heat. Add the mushrooms and cook for 3–4 minutes until softened.

  4. Season with black pepper, paprika and oregano.

  5. Add the chopped tomatoes, baked beans and spinach. Stir to combine and cook for 3–4 minutes or until the spinach is wilted.

  6. Return the sausage slices to the pan and mix them into the tomato sauce.

  7. Make two small wells and crack an egg into each.

  8. Cover with a lid and cook on a low heat for 3–5 minutes, until the whites are set but the yolks remain soft.

  9. Serve immediately.

Note: This recipe can also be made without sausages if you prefer.
