Apple & Cinnamon Granola

Apple & Cinnamon Granola

Ingredients

  • 80g oats
  • 1 heaped tsp ground cinnamon
  • ½ tsp ground ginger
  • 20ml olive oil
  • 20ml honey
  • 1 tsp vanilla essence
  • 60g walnuts, roughly chopped
  • 40g dried apple, chopped into small pieces
  • 20g sultanas
  • 2 tbsp ground flaxseeds
  • 2 tbsp mixed seeds, such as pumpkin and sunflower

To serve (per portion):

  • Up to 125g Greek yoghurt
  • Fruit of your choice

Instructions:

  1. Preheat the air fryer to 160°C.

  2. In a large mixing bowl, combine the oats, cinnamon and ginger. Mix well.

  3. Pour the olive oil, honey and vanilla essence into the mixing bowl and stir until everything is evenly coated.

  4. Line the air fryer basket with suitable parchment paper and spread the granola mixture in an even layer. You may need to cook in batches depending on the size of your air fryer. Only add the parchment with the granola on top to weigh it down.

  5. Cook for 5 minutes, stirring halfway through. Add the walnuts, stir well, then cook for another 3–7 minutes until golden, stirring every 2 minutes. Check regularly, as air fryers vary.

  6. Once golden, remove from the air fryer and allow to cool completely. The granola will crisp up as it cools. Stir through the dried apple, sultanas, ground flaxseeds and mixed seeds.

  7. Serve each portion with Greek yoghurt and a portion of fruit of your choice.

Note - Keep the Bircher and cooked figs in separate covered containers in the fridge for up to 2 days. Let the figs cool before refrigerating, and add the mixed seeds just before serving.
