Air Fryer Salmon & Veggies (LC)
Ingredients
- 1 tsp olive oil
- 1 tsp butter
- ¼ tsp garlic powder
- ¼ tsp dried parsley
- 80g green beans, trimmed
- 6-8 cherry tomatoes
- Black pepper, for seasoning
- 1 salmon fillet (about 110g)
- 2 slices of lemon
- 1 tbsp fresh parsley, chopped (optional)
- A handful of rocket
Instructions
Preheat the air fryer to 180°C.
Cut a large sheet of foil and brush with ½ of the olive oil.
Combine the butter, garlic powder and dried parsley in a small bowl, warm briefly in the microwave until just softened.
Add the green beans and tomatoes to the middle of the foil, drizzle with the remaining olive oil, and season well with black pepper.
Place the salmon fillet on top of the vegetables and spread over the garlic butter mixture.
Add the lemon slices on top, then fold the foil around everything to create a sealed parcel.
Transfer the foil parcel to the air fryer and cook for about 18 minutes, or until the salmon flakes when pressed with a fork.
Open the foil carefully, as hot steam will escape.
Finish with fresh parsley if using, and serve alongside some rocket.
