Hot Oats and Cranberry Compote
Ingredients
40g (½ cup) (1½ oz) cranberries, fresh or frozen
1 tsp honey
40g (½ cup) (1½ oz) porridge oats
135ml (⅔ cup) (4¾ fl oz) semi-skimmed milk
1 tsp flaxseed
Instructions:
In a pot add the cranberries along with the honey and allow to simmer on a medium heat for around around 10 minutes, can add a dash of water if necessary.
In a separate pot, add the oats and milk and allow it to come to the boil. Simmer on a medium heat until cooked approx. 5-10 minutes. Oats should be of thickish consistency when ready and the cranberries should have a jam like consistency when ready.
Add oats to a bowl then top with the cranberry compote and sprinkle over the flaxseed.
