Fig and Pear Bircher Muesli

Ingredients

  • 80g porridge / oats

  • 80ml unsweetened apple juice

  • 50ml full-fat Greek yoghurt

  • 25g dried figs, chopped

  • ½ small carrot, peeled and grated

  • Juice and zest of ½ small orange

  • 2 tsp pistachios, crushed

  • 1 pear, cored and grated (skin left on)

  • 50g frozen raspberries or blueberries, defrosted

  • 2 tsp honey

Instructions:

  1. Place the oats, apple juice, yoghurt, figs, carrot, orange juice and zest, half of the pistachios and half of the grated pear in a medium bowl. Mix well and leave in the fridge for a minimum of 3 hours or overnight.

  2. Before eating, stir in the remaining pear and the berries and top with the remaining pistachios and drizzle with honey.

Top Tip

The recipe makes 2 portions. The remainder can be stored in an airtight container in the fridge for a few days.
