Chicken Caesar Salad (LC)
Ingredients
2 bacon slices
100g cooked/roasted chicken, diced or shredded
A large handful of iceberg lettuce, shredded (or mixed salad leaves)
1 large tomato, quartered
¼ cucumber, sliced
½ red onion, finely sliced
2 tbsp parmesan flakes
1 heaped tbsp of real Caesar dressing
Black pepper, to taste
1 tsp pine nuts
Instructions
Heat a non-stick frying pan over medium heat and cook the bacon until crisp, turning as needed. Once cooked, transfer to a plate lined with kitchen paper to drain any excess fat and chop into bite-sized pieces.
Add the chicken, lettuce, tomato, cucumber, red onion, parmesan and cooled bacon to a bowl.
Add the Caesar dressing and stir gently so everything is coated; season with black pepper to taste.
Top with the pine nuts and enjoy.
Note - To make this recipe high carb, serve with 4 tbsp of croutons or 4 crackers/ crispbreads.
