Smash Burger Tacos

Lunch, Dinner

Serves: 1

Ingredients:

  • Tacos:

    • 100g mince (pork, beef, lamb, turkey or vegetarian)

    • ½ tsp black pepper, freshly ground

    • ½ tsp garlic granules

    • 2 small wholewheat tortillas

    • 1 tsp olive oil

    • 30g cheddar cheese, grated

    • 20g iceberg lettuce, sliced

    • 8 cherry tomatoes, diced

    • 1 gherkin/pickle, diced

    Burger Sauce:

    • 1 tbsp full-fat sour cream 

    • ½ tbsp tomato ketchup (reduced sugar)

    • 1 tsp yellow mustard

    • ½ tsp pickle juice

Instructions:

  1. Mix all of the ingredients for the burger sauce together and place in the fridge until ready to serve.

  2. Mix mince, black pepper and garlic granules together in a bowl.

  3. Divide mince evenly into two balls.

  4. Place one ball on each tortilla.

  5. Push down until the meat is evenly spread over the tortilla.

  6. Heat a frying pan with olive oil and bring to a medium heat.

  7. Cook meat side down for 3-4 minutes then flip, top with grated cheddar cheese and fry for 1 minute, until the meat is cooked through, the tortilla is crisp and the cheese is melted.

  8. Top tip – cover to pan loosely with tin foil to help melt the cheese.

  9. Top with lettuce, cherry tomatoes, gherkin and a good drizzle of burger sauce.

  10. Serve with a side salad.
