Smash Burger Tacos

Ingredients:
Tacos:
100g mince (pork, beef, lamb, turkey or vegetarian)
½ tsp black pepper, freshly ground
½ tsp garlic granules
2 small wholewheat tortillas
1 tsp olive oil
30g cheddar cheese, grated
20g iceberg lettuce, sliced
8 cherry tomatoes, diced
1 gherkin/pickle, diced
Burger Sauce:
1 tbsp full-fat sour cream
½ tbsp tomato ketchup (reduced sugar)
1 tsp yellow mustard
½ tsp pickle juice
Instructions:
Mix all of the ingredients for the burger sauce together and place in the fridge until ready to serve.
Mix mince, black pepper and garlic granules together in a bowl.
Divide mince evenly into two balls.
Place one ball on each tortilla.
Push down until the meat is evenly spread over the tortilla.
Heat a frying pan with olive oil and bring to a medium heat.
Cook meat side down for 3-4 minutes then flip, top with grated cheddar cheese and fry for 1 minute, until the meat is cooked through, the tortilla is crisp and the cheese is melted.
Top tip – cover to pan loosely with tin foil to help melt the cheese.
Top with lettuce, cherry tomatoes, gherkin and a good drizzle of burger sauce.
Serve with a side salad.
