Apple and Cinnamon Energy Balls

Serves: 1 to 2

Ingredients:

  • 3 cup of oats (rolled or plain instant oats)

  • 1/4 cup of honey

  • 3 grated apple

  • 1 tsp cinnamon

  • pinch of nutmeg

  • 1/3 cup of peanut butter

  • 3 tbsp chia seeds

Instructions:

  1.  To begin, grate 3 apples (feel free to leave the skin or leave on. I left the skin on)

  2. In a bowl, add the grated apple, oats, honey, cinnamon, nutmeg, peanut butter and chia seeds

  3. Using a spoon or your hands (easier with hands), combine the mixture together ensuring everything is combined

  4. Taste a little of the mixture, feel free to add a bit more cinnamon, nutmeg or peanut butter if you desire

  5. The mixture should be sticky but not too much. If the mixture doesn't stick, add a bit more honey or if the mixture is too loose, add a bit more oats

  6. Take a good heaped tablespoon of the mixture into your hands and roll into a ball

  7. You should get 12-15 balls from this recipe, depending on size

  8. Pop into the fridge and allow to set for around 2 hours before serving


    Perfect afternoon pick me up, will last around 3-5 days in the fridge. They can also be frozen.
